Ingredients

  • 2 slices bacon , chopped
  • 1 can (10 fl oz/284 mL) 25%-less-sodium chicken broth
  • 1-1/4 lb. (565 g) baking potato es (about 3) peeled, cubed
  • 2 cups frozen corn , thawed, drained
  • 2 stalks celery , sliced
  • 1/2 cup chopped onion s
  • 1/3 cup Miracle Whip Calorie-Wise Spread
  • 2 Tbsp. flour
  • 2 cups skim milk

Makes 6 servings, 1 cup (250 mL) each.

Instructions

  • 1. Cook bacon in large saucepan until crisp. Remove bacon from pan; drain on paper towels. Discard drippings from pan.
  • 2. Add broth and vegetables to saucepan. Bring to boil; simmer on low heat 15 min. or until potatoes are tender.
  • 3. Mix Miracle Whip and flour in medium bowl. Gradually stir in milk. Add to potato mixture with bacon; cook 3 to 5 min. or until slightly thickened and heated through, stirring constantly.
