Ingredients

  • 7 potato cut into pieces large washed
  • 7 bacon rashers diced fat trimmed
  • 1 red onion diced
  • 1/4 bunch spring onion thinly sliced
  • 3/4 cup salad dressing
  • 250 ml sour cream
  • 3/4 cup whole-egg mayonnaise
  • 1 tsp lemon pepper *to taste

Instructions

  • Cook the roughly diced potatoes in a large saucepan with some salt.
  • Add the bacon and onion to a frying pan and cook until soft.
  • Set aside one quarter of the cooked bacon and onion for garnishing.
  • Drain and steam cooked potatoes.
  • Once drained and steamed, add the potatoes back into the saucepan and pour over the dressing.
  • Add remaining cooked bacon and onion, sour cream and mayonnaise to the potatoes and gently mix all ingredients until well combined.
  • Pour the potato salad into a glass bowl and top with the bacon and onion.
  • Sprinkle with some lemon pepper and top with spring onions for freshness.
  • Refrigerate until ready to serve.
