Ingredients

  • 1 cup coconut milk
  • 1/2 cup Compliments Creamy Peanut Butter
  • 11/2 tablespoons Compliments Soya Sauce
  • 1/4-1/2 teaspoon crushed red pepper
  • 11/4 pounds pork tenderloin
  • 1/4 cup firmly packed Light Brown Sugar
  • 1 teaspoon minced garlic

Instructions

  • In a small saucepan, combine coconut milk, peanut butter, 1/2 tablespoon soy sauce, and red pepper over medium-high heat. 
  • Whisk often until smooth and warm, 2 to 3 minutes. 
  • Remove from heat and keep warm.
  • Preheat oven broiler to high. 
  • Cut pork crosswise into 3 equal portions (each should be 3-4 inches long). 
  • With a long, sharp knife, cut pieces lengthwise into slices about 1/4-inch thick. 
  • Lay slices out in a single layer in a nonstick broiler pan. 
  • In a small bowl, mix together remaining soy sauce, sugar, and garlic. 
  • Using a small spoon spread half of the sugar mixture in a thin layer over meat slices.
  • Broil meat 6 inches from heat until well browned (sugar will brown quickly), 2-3 minutes. 
  • With tongs, turn meat over. 
  • Spread with remaining sugar mixture and return to broiler. 
  • Broil until browned and meat is no longer pink in center (cut to test), about 2 more minutes. 
  • Transfer meat to a serving platter and spoon peanut sauce into a bowl. Offer sauce to add to meat to taste.
