Ingredients

  • 800 g Bintje potatoes
  • 1 Onions
  • 500 g Carrots
  • 1 orange
  • 90 mL (6 tablespoon) Wheat flour (patent)
  • 2 Eggs
  • 30 mL (2 tablespoon) Sunflower oil
  • 75 mL (5 tablespoon) Olive oil
  • 3 pinch Salt
  • 3 pinch Pepper

Instructions

  • Grate the potatoes very finely and chop the onion.
  • Add the whole eggs, the flour and 3 pinches of salt. Mix to obtain a smooth and homogenous batter. Let it rest for a few minutes.
  • In the meantime, peel and grate the carrots. Season with a mixture of 3 tablespoons of olive oil and the orange juice. Add salt and pepper.
  • Heat 1 tablespoon of sunflower oil in a frying pan.
  • Pour in the batter using a ladle to obtain pancakes 10 cm in diameter.
  • Cook for about 4 minutes. When the edges are golden, flip the pancake with a spatula or slide on a frying pan lid and turn it over in a single movement. Cook for another 4 minutes.
  • Drain on a paper towel. Sprinkle with pepper.
  • Serve the plenze with onion along with the grated carrots with orange.
