Ingredients

  • 1 yellow onion
  • 30 mL (2 tbsp.) olive oil
  • 1 potato, cubed
  • 5 parsnips, peeled and cut into pieces
  • 4 pears, cubed
  • 750 mL (3 cups) chicken broth
  • To taste, salt and pepper
  • 60 mL (1/4 cup) 15% cooking cream
  • 6 sprigs thyme

Instructions

  • Fry onion in oil in a large skillet over high heat.
  • Place potato, parsnips, pears, broth and onion in a large saucepan.
  • Season to taste and cook uncovered over medium heat for 20 minutes. 
  • Blend mixture in a food processor until smooth.
  • Add cream and return to saucepan.
  • Heat over medium for about 2 to 3 minutes. 
  • Garnish with croutons and thyme before serving.
