Peanut Butter and Jelly Banana Bread

Ingredients

  • 8 tablespoons (1 stick) unsalted butter
  • 1 1/4 cups unbleached all-purpose flour 
  • 1 teaspoon baking soda 
  • 1/2 teaspoon salt
  • 3/4 cup peanut butter 
  • 1/2 teaspoon pure vanilla extract 
  • 2 large eggs, at room temperature 
  • 1 cup sugar 
  • 4 ripe bananas, peeled and mashed
  • 1/2 cup chopped peanuts, divided
  • 3/4 cup strawberry preserves, divided

Instructions

  • Preheat oven to 350 degrees and spray a loaf pan with cooking spray.
  • Into a medium bowl, mix together flour baking soda and salt.  Set aside.
  • Into the bowl of your stand mixer, add butter and sugar and cream until light and fluffy, about 3 minutes.
  • Add peanut butter to butter and sugar, mix to combine and then add in vanilla extract, eggs and bananas.  Mix until just combined.
  • Using 1/2 cup at a time, gradually add the flour mixture to the banana mixture.  Once all flour has been added, mix until incorporated and then fold in 1/4 cup peanuts.
  • Place half of the batter into the prepared loaf pan.  Top with 1/2 cup preserves, down the middle, making sure to leave a 1/2-inch border between the preserves and the sides of the pan.  Carefully top with the remaining batter.  
  • Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
  • When the bread is cool to the touch, spread the remaining preserves over the top and sprinkle with remaining peanuts.  Cut into slices and serve.
