Preheat oven to 350 degrees and spray a loaf pan with cooking spray.
Into a medium bowl, mix together flour baking soda and salt. Set aside.
Into the bowl of your stand mixer, add butter and sugar and cream until light and fluffy, about 3 minutes.
Add peanut butter to butter and sugar, mix to combine and then add in vanilla extract, eggs and bananas. Mix until just combined.
Using 1/2 cup at a time, gradually add the flour mixture to the banana mixture. Once all flour has been added, mix until incorporated and then fold in 1/4 cup peanuts.
Place half of the batter into the prepared loaf pan. Top with 1/2 cup preserves, down the middle, making sure to leave a 1/2-inch border between the preserves and the sides of the pan. Carefully top with the remaining batter.
Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
When the bread is cool to the touch, spread the remaining preserves over the top and sprinkle with remaining peanuts. Cut into slices and serve.
