Ingredients

  • 625 mL (2 1/2 cups) Asian-blend frozen vegetables
  • 15 mL (1 tbsp.) olive oil
  • 1 clove garlic
  • 20 mL (4 tsp.) chopped fresh gingerroot
  • 1 L (4 cups) Compliments Chicken Broth, 30% Less Sodium
  • 450 g (1 lb) skinless walleye fillets, cubed
  • fresh coriander (optional)

Instructions

  • Reserve snow peas and bean sprouts from mixed vegetables.
  • In a saucepan, heat oil and sauté garlic, ginger and vegetable
  • mixture (without snow peas and bean sprouts) for 2 minutes.
  • Pour in broth and simmer, covered, for 5 minutes.
  • Add walleye cubes and snow peas.
  • Continue cooking for 8 minutes.
  • Pour soup into bowls and top with bean sprouts, dividing evenly.
  • Garnish with coriander if using.
