Ingredients

  • 500 ml or 2 cups all-purpose flour
  • 7 ml or 1 1/2 tsp baking powder
  • 2 ml or 1/2 tsp baking soda
  • 2 ml or 1/2 tsp salt
  • 300 ml or 1 1/4 cup All-Bran Original* cereal
  • 325 ml or 1 1/3 cup 2% milk
  • 1 medium orange
  • 50 ml or 1/4 cup vegetable oil
  • 75 ml or 1/3 cup liquid honey
  • 1 egg
  • 45 ml or 3 tbsp orange juice

Instructions

  • Combine flour, baking powder, soda and salt.
  • Set aside.
  • In large bowl, combine cereal and milk.
  • Let stand 3 minutes or until cereal is softened.
  • Cut orange into quarters and remove seeds; process in food processor or blender until finely chopped.
  • Stir into cereal mixture with oil, honey, egg and orange juice.
  • Beat well.
  • Add flour mixture, stirring just until combined.
  • Portion batter evenly into 12 lightly greased or paper-lined muffin pan cups.
  • Bake at 200°C (400°F) 20-25 minutes or until golden brown and firm to the touch.
