One-Pot Sausage and Mushroom Pasta

Ingredients

  • 2 tablespoons oil
  • 1 medium onion, finely diced
  • 3 garlic cloves, minced
  • 4 ounces mushrooms, finely diced
  • 1 medium green bell pepper, finely diced
  • 12 ounces smoked sausage (note 1), finely sliced
  • 8 ounces Barilla Penne Pasta
  • 4 cups chicken or vegetable stock
  • 26 ounces marinara sauce
  • ¼ teaspoon crushed red pepper flakes
  • ½ teaspoon dried oregano
  • 1 teaspoon dried basil
  • ¼ cup shredded parmesan cheese + extra for garnishing (note 2)
  • salt and pepper, to taste
  • fresh basil, to garnish

Instructions

  • Place the oil and onions in a large pot and sautee until the onions are translucent or 5 minutes.
  • Add the garlic and saute for another 1-2 minutes or medium heat.
  • Place the mushrooms, bell pepper, smoked sausage, penne pasta, stock, marinara sauce, crushed red pepper flakes, oregano, and basil into the pot and stir until combined. Allow the mixture to simmer over medium heat for 20-25 minutes or until the pasta is tender and the sauce has reduced.
  • Add the parmesan cheese and mix.
  • Taste and season with salt and pepper.
  • Serve and garnish with fresh parmesan cheese and basil.
