Ingredients

  • 1 packet fettuccine
  • 500 g frozen minted peas
  • 1 broccoli florets
  • 100 g pine nuts toasted
  • 80 ml olive oil
  • 1 clove garlic
  • 1 tsp salt
  • 1 pinch black pepper
  • 100 g Parmesan shredded *to decorate
  • 1 handful mint *to decorate
  • 2 L water

Instructions

  • Cook fettuccine pasta according to packet instructions until Al Dante. Drain and set aside 1/3 cup of the liquid.
  • Steam the broccoli and peas separately and set aside to cool.
  • Add the broccoli, minted peas, olive oil, pine nuts, garlic salt and pepper into a food processor and process until roughly chopped.
  • Toss the minted pea mixture with the pasta adding a little bit of the liquid that was reserved. Mix to make sure it is combined evenly.
  • Garnish with mint leaves and parmesan cheese and serve.
