Mini strawberry shortcakes Recipe
Ingredients
- 375 mL (1½ cups) strawberries, cut into pieces
- 60 mL (¼ cup) sugar
- 15 mL (1 tbsp.) lemon zest (about 1 lemon)
- ½ angel food cake
- 375 mL (1½ cups) 35% M.F. whipping cream
- To taste, fresh mint leaves for garnish

Instructions
- Combine strawberries, sugar, and lemon zest in a bowl.
- Marinate for at least 30 minutes.
- Whip the cream and set aside.
- In small ramekins, place pieces of cake, top with strawberries, and then whipped cream.
- Repeat a second time.
- Garnish with a mint leaf.
