Ingredients

  • 45 mL (3 tbsp) canola oil
  • 2 kg (5 lb.) sweet onions
  • 3 cloves garlic, finely chopped
  • 125 mL (½ cup) Compliments Organic 100 % Pure Maple Syrup
  • 1 carton (or 900 mL ) Compliments Fat Free Beef Broth
  • 15 mL (1 tbsp.)chopped fresh thyme
  • To taste, salt and pepper
  • 6 slices baguette, toasted
  • 500 mL (2 cups) shredded aged cheddar cheese

Instructions

  • Heat oil in a Dutch oven set over medium heat.
  • Add onion and cook, stirring frequently, for 30 minutes or until caramelized.
  • Add garlic and cook for 30 seconds.
  • Stir in maple syrup.
  • Add the broth and half of thyme, and bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Season to taste with salt and pepper. Preheat broiler.
  • Divide soup into 6 ovenproof bowls.
  • Top each bowl with one toast slices of toasted breads and about 80 mL (1/3 cup) of cheese.
  • Broil for 2 or 3 minutes or until cheese melts and lightly browns.
  • Sprinkle with remaining thyme and serve.
