Ingredients

  • 2 cups raspberries
  • ? cup honey
  • ½ lemon, zested and juiced
  • 6 tbsp of vanilla Greek yogurt
  • ½ cup all purpose flour
  • ½ cup All-Bran Original* cereal, ground
  • 2 tsp baking powder
  • ? tsp salt
  • 1egg
  • 1 cup milk
  • 1 tbsp honey
  • ½ lemon, zested and juiced
  • 1 tsp of vanilla
  • 2 tbsp coconut oil, melted
  • ? cupricotta

Instructions

  • Make the berry compote.
  • In a small pot, add raspberries, honey, zest and juice of ½ a lemon.
  • Cook on medium-high heat until berries have thawed and syrup comes together after about 5 minutes or so.
  • Prep your waffle iron before you have mixed the batter together.
  • In a medium mixing bowl, add flour, ground Kellogg’s* All-Bran Original* cereal, baking powder and salt.
  • Whisk and set aside.
  • In a measuring cup combine egg, milk, honey, vanilla and the other half of the zest and juice to dry ingredients.
  • Once incorporated, fold in the melted coconut oil and ricotta cheese.
  • Use the waffle iron to prepare all the waffles, then garnish with vanilla Greek yogurt and berry compote.
