Ingredients

  • 1 can (170g) CLOVER LEAF® Solid White Albacore Tuna, drained
  • ¼ cup Pumpkin seeds
  • ¾ cup Cilantro, packed
  • ½ cup Spinach, packed
  • ¼ cup Sour cream, light
  • 3 Spring onions, chopped
  • 1 tbsp Lime juice
  • ¼ tsp Sea salt
  • ¼ tsp Black pepper
  • 8 leaves Boston/Bibb lettuce

Toppings :

  • 4 tbsp Sour cream, light
  • 8 tbsp Cheese, low sodium, shredded
  • 8 Cherry tomatoes, cut into quarters
  • ½ cup Red onion, chopped

Instructions

  • Blend together seeds, cilantro, spinach, sour cream, spring onions, lime juice, salt and pepper to form a smooth dressing.
  • Add dressing to tuna and gently stir together to coat.
  • Divide the tuna mixture onto lettuce leaves, then top each with your favorites.
  • We used sour cream, cheese, tomato and red onion.
