Ingredients

  • 1 centre-cut pork loin roast (4 lb./1.8 kg)
  • 1 tsp. ground black pepper
  • 4 carrot s, peeled, chopped
  • 4 parsnips , peeled, chopped
  • 2 cups peeled rutabaga slices (1/2 inch thick)
  • 1/4 cup maple syrup
  • 2 Tbsp. each Heinz Tomato Ketchup and Heinz Yellow Mustard
  • 1 Tbsp. Heinz Apple Cider Vinegar
  • 1 Tbsp. each chopped fresh rosemary and minced gingerroot
  • 2 cans (14 fl oz/398 mL each) Heinz Maple Style Beans with Pure Quebec Maple Syrup
  • 1 red pepper , chopped

Instructions

  • 1. Place roast in roasting pan sprayed with cooking spray; sprinkle with black pepper. Place vegetables in pan around roast; cover.
  • 2. Bake 1 hour. Meanwhile, combine all remaining ingredients except beans and red peppers.
  • 3. Reserve half the syrup mixture; brush remaining syrup mixture onto roast. Bake, uncovered, 1 hour, brushing occasionally with some of the reserved syrup mixture.
  • 4. Spoon beans over vegetables in pan; sprinkle with red peppers. Bake 20 to 30 min. or until roast is done (160ºF), brushing occasionally with remaining syrup mixture.
  • 5. Remove pan from oven. Let stand 10 min. before slicing the roast and serving with the vegetable mixture.
