Ingredients

  • 4 teaspoons vegetable oil
  • 3/4 pound (51 to 60 count) medium raw shrimp, peeled and deveined
  • 2 cups thin green beans, cut in 1 1/2-inch pieces
  • 3 cups coarsely chopped bok choy
  • 1 can (8 ounces) bamboo shoots, rinsed and drained
  • 1 can (13.5 ounces) light coconut milk
  • 1 to 2 tablespoons green curry paste
  • 2 pouches (8.8 ounces each) UNCLE BEN'S® READY RICE® ORIGINAL LONG GRAIN

Instructions

  • In 10-inch nonstick skillet, heat oil over medium-high heat. Cook and stir shrimp, green beans, bok choy, and bamboo shoots until shrimp is pink and vegetables are crisp-tender.
  • Stir in coconut milk and curry paste. Cook and stir 2 minutes longer or until heated through and combined.
  • Meanwhile, heat rice as directed on package. Divide curry and rice among 4 dinner plates. Garnish with cilantro, if desired
