Ingredients

  • 4 eggs
  • 1 tbsp (15 mL) white vinegar
  • 1 ripe avocado, peeled and pitted
  • 2 tbsp (30 mL) lime juice
  • 1 tbsp (15 mL) finely chopped fresh cilantro
  • 1 tbsp (15 mL) finely chopped fresh parsley
  • 2 tsp (10 mL) finely chopped fresh chives
  • Pinch salt
  • 4 slices sourdough bread, toasted
  • 1/4 cup (60 mL) finely crumbled feta cheese

Instructions

  • Poach eggs in saucepan of simmering water with vinegar for about 4 minutes or until whites are firm but yolks are still soft. Lift out eggs using a slotted spoon; drain on paper towel.
  • Meanwhile, in bowl, mash together avocado, lime juice, cilantro, parsley, chives and salt. Spread evenly over toasted bread slices.
  • Top each one with an egg. Sprinkle with feta cheese.
