Healthy Oatmeal Raisin Breakfast Bars

Ingredients

  • 1½ cups old fashioned oats (any oat will do)
  • 1½ cups whole wheat flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 2 bananas, mashed
  • ½ cup honey
  • 1 teaspoon pure vanilla extract
  • 1 cup raisins
  • ½ cup unsweetened shredded coconut

Instructions

  • Preheat oven to 350 degrees and line an 8x8 or 9x9 pan with parchment paper. To help the parchment paper stick, spray the pan with non-stick first; set aside.
  • In a large bowl, mash the bananas then add the eggs, honey and vanilla. Stir until combined.
  • Next, add the oats, flour, baking soda, salt and cinnamon. Mix until combined.
  • Lastly, stir in the raisins and coconut.
  • Pour into prepared pan and bake for 20 minutes. Enjoy warm or room temperature.
