Preheat oven to 350 degrees and line an 8x8 or 9x9 pan with parchment paper. To help the parchment paper stick, spray the pan with non-stick first; set aside.
In a large bowl, mash the bananas then add the eggs, honey and vanilla. Stir until combined.
Next, add the oats, flour, baking soda, salt and cinnamon. Mix until combined.
Lastly, stir in the raisins and coconut.
Pour into prepared pan and bake for 20 minutes. Enjoy warm or room temperature.
