Grilled Shrimp Cocktail Skewers

Ingredients

  • ½ medium sweet onion, cut into 2.5 cm (1 in.) chunks
  • 1 package (340 g) Compliments • Organic Naturalina™ grape tomatoes
  • 12 medium raw shrimp, peeled and deveined
  • to taste vegetable oil
  • To taste, salt and pepper
  • 125 ml (½ cup) store-bought cocktail sauce
  • 3 heavy wood skewers soaked in water
  • 500 to 750 ml (2 to 3 cups) shredded lettuce (optional)
  • To taste, lemon wedges

Instructions

  • Thread ingredients onto skewers in following order: onion, grape tomato, shrimp.
  • Repeat.
  • Finish with a piece of onion and a tomato.
  • Lightly brush skewers with oil on each side and season to taste with salt and pepper.
  • Preheat grill to medium-high and cook skewers, turning and basting regularly with cocktail sauce, until shrimp is cooked through (about 5 to 6 minutes).
  • Arrange on a platter of shredded lettuce with lemon slices and additional cocktail sauce if desired.
