Heat oven to 425 degrees and place washed potatoes into oven for one hour (or put them in a plastic bag in the microwave for 10 minutes).
Heat charcoal either directly in the kettle of the grill or using a charcoal chimney (my preferred method) until very hot (usually 20 minutes to heat up). If you'd prefer, you may also use a gas grill). Oil grill grates using a paper towel saturated with vegetable oil. Use long tongs to wipe the grill with the paper towel soaked in oil! Cook pork loin approximately 3-4 minutes per side (4 sides) until cooked through then remove from grill. Make sure to keep the grill covered while cooking.
Using two layers of aluminum foil, create a pouch for the chopped broccoli. Form into the shape of a large bowl, then add the broccoli and 1/2 cup of water and seal the pouch. Place on top of charcoal grill at the same time the pork goes on the grill.
Remove pork and broccoli from the grill. Carefully open the pouch of broccoli. Dice grilled pork. Slice open baked potatoes and add butter, broccoli, cheese, diced grilled pork, and sour cream. Enjoy your easy night of cooking!
