Ingredients

  • 4 live lobsters, 450-675 g (1-1½ lb.) ea
  • 5 mL (1 tsp.) lemon juice
  • 10 mL (2 tsp.) chopped capers
  • 10 mL (2 tsp.) grated lemon zest
  • 15 mL (1 tbsp.) chopped fresh chives
  • 45 mL (3 tbsp.) Italian bread crumbs
  • 45 mL (3 tbsp.) grated Parmesan cheese
  • 30 mL (2 tbsp.) melted butter

Instructions

  • Blanch lobsters in salted water for 8 to 10 minutes.
  • Cut lobsters in half lengthwise and crack claws.
  • Remove the little sack near the head and pat the meat dry.
  • Preheat barbecue at medium-high.
  • Mix all breadcrumb ingredients, except butter, and set aside.
  • Pour melted butter onto the meat side
  • of each lobster half and spread breadcrumbs.
  • Place lobster halves (shell side) and claws on pre-oiled barbecue grill.
  • Cook 5 to 6 minutes until breadcrumbs are crisp.
