Ingredients

  • 1 1/2 lb extra lean ground beef
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 jar PACE® Chunky Mild Salsa
  • 2 cups shredded Cheddar cheese
  • 12 flour or corn tortilla (6-inch)

Instructions

  • Brown the ground beef in large skillet over medium-high heat, stirring often and breaking up beef with spoon, about 10 minutes.
  • Pour off any fat.
  • Remove from heat.
  • Stir in chili powder, garlic powder, 1/2 cup of the salsa and 1 cup of the cheese.
  • Spread 1/2 cup of the salsa in a 3-quart shallow baking dish.
  • Spoon beef mixture equally down the center of tortillas.
  • Roll up and place seamside down in the baking dish.
  • Top with the remaining salsa and cheese.
  • Bake in 350°F oven for 20 minutes or until the enchiladas are hot and the cheese melts.
