Ingredients

  • 3 egg whites
  • 1/4 cream of tartar
  • 3/4 cup sugar
  • 1/2 tsp. vanilla
  • pastel food coloring gel
  • chocolate eggs or jelly beans

Instructions

  • First, set the egg whites out at room temperature for about half an hour.
  • Preheat oven to 275 degrees.
  • In a large mixing bowl, beat the egg whites with vanilla, cream of tartar to create soft peaks.
  • Add the sugar gradually by the tablespoon, beating on high until stiff peaks are formed.
  • Add the gel coloring, drop by drop, and mix to desired tint.
  • Fill a pastry bag with the meringue mixture and swirl 8 mounds onto a parchment paper lined cookie sheet.
  • Gently press a spoon to create into the top of each swirl to create a shallow cup.
  • Bake for 45 - 50 minutes until set.
  • Turn off the oven and DO NOT OPEN THE DOOR.
  • Leave in the oven for 1 hour.
  • Fill each meringue nest with chocolate eggs or jelly beans. Enjoy!
