Ingredients

  • 60 mL (1/4 cup) Compliments Whole-grain Dijon Mustard
  • 1/2 cucumber, sliced
  • 4 radishes, sliced
  • 4 leaves red leaf lettuce
  • To taste, salt and pepper
  • 1 tomato, thinly sliced
  • 150 g (5 oz) fresh goat cheese
  • 4 olive ciabattas, sliced in half horizontally

Instructions

  • Toast ciabattas until crispy in a toaster or toaster oven.
  • Spread goat cheese on bottom half of each ciabatta.
  • Top with tomato slices and season with salt and pepper to taste.
  • Garnish with a lettuce leaf and then add radish and cucumber slices.
  • Spread remaining ciabatta halves with mustard and close sandwiches.
