Ingredients

  • Crust
  • 2 cups Robin Hood® Original All Purpose Flour or All Purpose Whole Wheat Flour
  • 1/2 cup granulated sugar
  • 3/4 cup butter, softened
  • Topping
  • 4 eggs
  • 1 cup corn syrup
  • 1 cup granulated sugar
  • 1 pkg butterscotch chips
  • 1/4 cup butter, melted
  • 1 1/3 cups halved cashews

serving size: 36 1” (2.5 cm) squares

Instructions

  • Preheat oven to 350ºF (180ºC). Grease and line a 9” x 13” (3 L) baking dish, overlapping 2 sides for easy removal.

Crust:

  • Combine flour and sugar in a large mixing bowl. Using a pastry blender or 2 knives cut butter into flour mixture until it resembles coarse meal. Press firmly into prepared pan.
  • Bake in centre of preheated oven for 15 to18 minutes, or until light golden.

Topping:

  • Beat eggs, sugar, corn syrup and melted butter until blended. Stir in butterscotch chips and cashews. Pour evenly over crust.
  • Bake in preheated oven for 30 to 35 minutes longer, or until set and golden. Cool completely in pan on rack then cut into squares.
