Instructions
Preheat oven to 350ºF (180ºC). Grease and line a 9” x 13” (3 L) baking dish, overlapping 2 sides for easy removal.
Crust:
Combine flour and sugar in a large mixing bowl. Using a pastry blender or 2 knives cut butter into flour mixture until it resembles coarse meal. Press firmly into prepared pan.
Bake in centre of preheated oven for 15 to18 minutes, or until light golden.
Topping:
Beat eggs, sugar, corn syrup and melted butter until blended. Stir in butterscotch chips and cashews. Pour evenly over crust.
Bake in preheated oven for 30 to 35 minutes longer, or until set and golden. Cool completely in pan on rack then cut into squares.
