Ingredients

  • 1 lb (454 g) boneless, skinless chicken breasts
  • 1/3 cup (75 mL) light or regular mayonnaise
  • 1 tsp (5 mL) Dijon mustard
  • 1 ¼ cups (300 mL) bread crumbs (preferably Panko)
  • 3/4 cup (175 mL) grated Parmesan or cheddar cheese
  • 1/3 cup (75 mL) Crisco® Vegetable or Canola Oil

Instructions

  • Pat chicken dry and cut each breast into 4 or 5 strips.
  • Combine mayonnaise and mustard in a large bowl. Add chicken pieces and combine well.
  • Combine breadcrumbs and cheese in a separate low sided dish. Roll chicken fingers in crumbs one at a time and pat crumbs firmly into chicken.
  • Heat oil in a large deep skillet on medium heat. Cook for 3 to 4 minutes per side until golden brown.
  • You can bread these chicken fingers up to 4 hours ahead of time. Place in a single layer and refrigerate until ready to use.
