Ingredients

  • 450 g (1 lb.) Compliments Sunset® Campari® Tomatoes
  • 1 Compliments European Baguette
  • To taste, olive oil
  • To taste, salt
  • 60 ml (¼ cup) chopped fresh basil
  • 30 ml (2 tbsp.) diced red onion
  • 10 ml (2 tsp.) chopped fresh garlic
  • 45 ml (3 tbsp.) store-bought Caesar dressing
  • To taste, small fresh basil leaves
  • To taste, Freshly grated Parmesan

Instructions

  • Preheat grill to medium-high.
  • Cut tomatoes into ½ to 1 cm (¼ to ½ in.) cubes and place in a strainer to drain off any excess juice.
  • Meanwhile, cut baguette into twelve diagonal 1 cm (½ in.) slices.
  • Lightly brush both sides of baguette slices with oil and grill on both sides until lightly marked or toasted.
  • Sprinkle lightly with salt.
  • Place on a platter.
  • In a medium-size bowl, combine drained tomatoes, basil, onion, garlic and Caesar dressing.
  • Spread mixture over grilled baguette slices.
  • Sprinkle with Parmesan and garnish with basil leaves.
