Ingredients

  • 30 mL (2 tbsp) butter
  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 60 mL (1/4 cup) flour
  • 1 L (4 cups) poultry (or vegetable) broth
  • 1 head of broccoli, cut into florets
  • 400 g (4 cups) Armstrong Medium Cheddar Cheese, grated
  • Croutons
  • 15% cream
  • Herbs (parsley, dill, basil, etc.), chopped

Instructions

  •  In a stock pot over medium heat, brown the onion and garlic in butter, stirring occasionally, for 3 minutes.
  • Add the flour and stir while cooking for 2 minutes.
  • Add the broth and broccoli.
  • Continue stirring while cooking for 10 minutes.
  • Using a hand blender, blend the soup to a smooth consistency.
  • Add half of the Armstrong Medium Cheddar Cheese and stir until the cheese has melted.
  • Serve, topped with croutons, cream, herbs, and the remaining cheddar.
