Ingredients

  • 1 lb lean ground beef
  • 1/2 cup grated yellow or red onion
  • 1 clove minced garlic
  • 1/2 tsp salt and pepper
  • 1 tbsp vegetable oil
  • 1 can CAMPBELL’S® Condensed 25% Less Calories Tomato Soup
  • 1/2 cup mayonnaise
  • 2 tbsp finely chopped dill pickle
  • 1 tbsp ketchup
  • 6 cups chopped iceberg lettuce
  • 1 cup shredded or diced old Cheddar cheese
  • 1 cup halved cherry tomatoes
  • 1/4 cup dill pickle slices
  • 1/2 cup sesame croutons

Instructions

  • In a bowl, lightly combine beef, onion, garlic, salt and pepper.
  • Form into bite sized meatballs.
  • In a skillet, heat oil over medium high heat, and cook meatballs just until browned all over, about 5 minutes.
  • Stir in soup with a wooden spoon, and reduce heat to maintain a simmer.
  • Cook until the meatballs are cooked through, about 10 minutes.
  • Remove from heat and let cool.
  • Stir in mayonnaise, chopped pickles, and ketchup just until blended
  • In a large bowl, combine meatball mixture with iceberg lettuce.
  • Sprinkle with cheddar, tomatoes and pickles.
  • Garnish with croutons just before serving.
