Beef Burrito Bowl with Cilantro Rice

Ingredients

  • 1 (15-ounce) package HORMEL® Slow Simmered Beef Roast Au Jus
  • 1 (8.8-ounce) package UNCLE BEN'S® Original Long Grain Ready Rice
  • 2 teaspoons vegetable oil
  • 2 cups frozen bell pepper-onion blend
  • 1 cup frozen roasted or whole kernel corn
  • 1/2 teaspoon chipotle chili powder
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon grated lime zest
  • 1 teaspoon fresh lime juice
  • 2 cups chopped Romaine lettuce or chopped baby spinach
  • 2 medium Roma tomatoes, chopped
  • 1 medium avocado, sliced
  • 4 teaspoons sour cream
  • 4 teaspoon grated Cotija cheese

Instructions

  • Heat beef according to package directions.
  • Heat rice in microwave as directed on package.
  • While beef and rice are heating, in 10-inch nonstick skillet, heat oil over medium-high heat. Cook and stir pepper blend and corn 3 to 4 minutes or until crisp tender. Keep warm.
  • Remove beef from package into medium bowl. Stir in chili powder and 2 to 3 tablespoons au jus.
  • Fully open bag of rice. Using hot pad to hold bag, stir cilantro, lime zest and lime juice into rice.
  • Divide lettuce, rice, beef, pepper mixture, tomatoes, avocado, sour cream and cheese among 4 large soup bowls.
