Ingredients

  • 250 g F. Ménard sliced bacon, diced (1 package)
  • 500 mL (2 cups) finely chopped leeks, white part only
  • 120 g (1/4 lb.) cream cheese, softened (about 125 mL 1/2 cup)
  • 100 g (3 1/3 oz.) sharp cheddar, shredded (about 1 cup)
  • 75 mL (1/3 cup) chopped fresh parsley
  • To taste freshly ground pepper
  • 8 slices Au Pain Doré country-style loaf

Instructions

  • Place oven rack in middle position and preheat oven to broil.
  • Fry bacon in a non-stick skillet over medium-high heat for 3 to 5 minutes.
  • Add chopped leeks and continue cooking for 1 minute.
  • Remove from heat and let cool for 5 minutes.
  • Add cheeses, parsley, and pepper.
  • Mix well to combine.
  • Arrange bread slices on a parchment-lined baking sheet.
  • Divide bacon mixture evenly onto bread slices.
  • Broil for 5 to 7 minutes or until golden.
  • Serve as a cocktail, a side for brunch or breakfast, or with a delicious soup.
