Ingredients

  • 2 pouches UNCLE BEN’S® READY RICE® Jasmine
  • 2 sheets Nori, (roasted seaweed sushi wrappers)
  • 1 can albacore white tuna, drained
  • 1 avocado, cut into small cubes
  • ½ cup shredded carrot
  • 1 yellow bell pepper, cut into 1½ inch strips
  • 1 small cucumber, peeled and cut into long spears

Instructions

  • Microwave rice pouches according to package directions. (Optional step to add flavor to your rice: When finished cooking, pour rice into a bowl and mix in 1 tablespoon vinegar and 2 teaspoons sugar.)
  • Cover a bamboo rolling mat with plastic wrap. Place a Nori wrapper on the mat.
  • Top Nori with ½ of the rice. Spread it out so it is an even layer covering the whole wrapper.
  • Place a line of tuna down the middle of the rice layer, then add a line of avocado, and the carrot shreds.
  • Use the bamboo mat to roll your sushi, making it as tight as you can.
  • Cut roll into 4 even pieces.
  • Place one piece on a plate and add the yellow bell peppers and cucumbers as petals and leaves to form your sunflower.
