Ingredients

  • 2 Eggs
  • 0.5 Red peppers
  • 80 g aragula lettuce
  • 60 g potato
  • 1 Onions
  • 20 g Chorizo
  • 0.5 Mustard
  • 1 Wine vinegar
  • 30 mL (2 tablespoon) Olive oil
  • 30 mL (2 tablespoon) Olive oil
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions

  • Peel and rinse the potato and toss in a saucepan with cold water; bring to a boil and cook for 10 minutes over medium heat.
  • Cut the pepper and onion into thin slivers. Soften for 10 minutes in a large frying pan with a little olive oil. Add the chorizo. Heat again for 1 to 2 minutes. Set aside and leave to cool.
  • Beat the eggs in a large bowl. Season with salt and pepper. Gently incorporate the slivered potato followed by the stewed pepper and onion.
  • Leave to rest for 10 minutes.
  • Pour the mixture in the frying pan with a little hot olive oil. Cook for 5 minutes over low heat without stirring.
  • When the bottom is nicely golden, flip the tortilla using a large lid with handle. Cook for about 3 minutes.
  • Wash and dry the aragula. Make the vinaigrette in a salad bowl and add the aragula.
  • Slide the tortilla on to a large plate.
  • Serve the red pepper tortilla along with aragula salad.
