Ingredients

  • 1 package (454 g/1 lb.) firm tofu
  • 1 can (796 ml/28 oz.) diced tomatoes
  • 2 zucchini
  • 1 medium eggplant
  • 2 cloves garlic
  • 2 onions
  • 15 ml (1 tbsp.) canola oil
  • 5 ml (1 tsp.) dried oregano
  • 2 ml (1/2 tsp.) dried basil
  • To taste, salt and pepper

Instructions

  • Heat oil over medium-high in a large pan.
  • Add onions and garlic and fry 5 minutes or until soft.
  • Add eggplant and cook 10 to 15 minutes, stirring regularly.
  • Add zucchini and cook 5 minutes longer.
  • Add tomatoes, tofu, oregano and basil.
  • Salt and pepper to taste.
  • Reduce heat to medium and continue cooking 10 minutes.
  • Serve with brown rice or other cereal grain.
