Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup ground flaxseed
  • 1/2 tsp. cinnamon
  • 1/2 cup brown rice flour
  • 1/4 cup pumpkin seeds
  • 3 Tbsp. sunflower seeds
  • 1/4 tsp. salt
  • 1/4 cup Crosby’s Fancy Molasses
  • 2 Tbsp. honey or maple syrup
  • 5 – 6 Tbsp. melted coconut oil (or grape seed or canola oil)
  • 1 tsp. vanilla extract
  • 1/4 cup bittersweet Chocolate Chips

Instructions

  • Line an 8″x8″ pan with parchment paper.
  • Pre-heat the oven to 350 F
  • In a large bowl combine all dry ingredients.
  • In a medium bowl combine the wet ingredients.
  • Add the wet ingredients to the dry and stir well.
  • Stir in chocolate chips.
  • Press into prepared pan
  • Bake for 25-28 minutes (you want the edges to be a little brown so they’re crunchy.)
  • Cool completely before slicing.
