Stuffed Jalapeño Poppers

Ingredients

  • 20 jalapeños, halved and seeds and vein removed
  • 1 pound pork sausage (I used Jimmy Dean's regular)
  • 1, 8 ounce block cream cheese
  • 1 cup grated parmesan cheese

Instructions

  • Preheat oven to 350 degrees.
  • Prepare jalapeños by cutting in half length wise and using a spoon to remove veins and seed (if you have gloves, it would be wise to use them.
  • Careful not to touch your eyes or nose! Wash your hands thoroughly after). Place on a rimmed baking sheet; set aside.
  • Brown sausage in a skillet. Once cooked through, add cream cheese and stir until combined (this will take awhile but stir until the cream cheese is fully mixed in with the sausage). Add parmesan cheese and stir until combined.
  • Stuff the peppers with the sausage mixture and bake for 20-25 minutes. Let cool and enjoy!
