Ingredients: 100 g. caster sugar; 500 g. strawberries; 50 mL cassis

100 g. caster sugar
500 g. strawberries
50 mL cassis

Instructions

In a small pan, add 100ml/4fl ozboiling water, add sugar, heatgently and stir, till sugar dissolves.Put to one side to cool.
Add strawberries andcassis or lemon juice to afood processor and whizz tillpuréed. Then pour in sugarsyrup and whizz to combine.
Pour into a freezer-proof dish, cover with clingfilm and put in freezer. It should be frozen in about 2 hrs. Chop it up roughly and return to food processor and whizz for15-20 secs, till smooth.Return to dish, cover and refreeze. Repeat process again 2 hrs later. Remove from freezer to allow to soften before serving, then scoop into glasses to serve.
