1/2 cup 25%-less-sodium chicken broth
1 cup (about 1/2 of 120-g pkg.) Stove Top Stuffing Mix for Chicken
1 cup frozen mixed vegetables (carrots, corn, green beans, peas) , thawed
YIELD 2 servings, 1/2 recipe (264 g) each
1. Heat oil in large nonstick skillet on medium heat. Add chicken; cook 5 min. on each side or until lightly browned on both sides. Remove chicken from skillet; cover to keep warm.
2. Add broth to skillet. Add stuffing mix; stir just until moistened. Top with vegetables and chicken; cover. Cook on low heat 10 min. or until chicken is done (165ºF) and vegetables are heated through.
