Ingredients

  • 2 cans (19 fl oz/540 mL each) mixed beans , rinsed
  • 2 cups salsa
  • 1 can (14 fl oz/398 mL) no-salt added diced tomatoes , undrained
  • 2 Tbsp. chili powder
  • 1-1/2 lb. (675 g) boneless skinless chicken thigh s, cut into bite-size pieces
  • 1 onion , chopped
  • 1 cup frozen corn
  • 1 cup Cracker Barrel Shredded Light Tex Mex Cheese

Instructions

  • 1. Combine first 4 ingredients in slow cooker; top with chicken, onions and corn. (Do not stir.) Cover with lid.
  • 2. Cook on LOW 6 to 8 hours (or on HIGH 4 to 5 hours).
  • 3. Stir just before serving. Serve topped with cheese.
