  • 1 Eggplant
  • 4 Baby bok choys
  • 2 Red peppers
  • 1 300-g package Peanut and ginger tofu
  • 125 ml (1/2 cup) cilantro chili lemon grilling sauce

Instructions

  • Heat sesame oil (or vegetable oil) in a wok or small saucepan and brown tofu approximately 3 minutes.
  • Stir in pepper, eggplant, bok choy and the grilling sauce; continue cooking 3–5 minutes until vegetables reach desired tenderness.
  • Salt and pepper.
  • When serving, garnish with fresh minced coriander to taste.
