Ingredients

  • 2 skinless chicken breasts, trimmed and cut into ¼ inch (5 mm) slices
  • 1/2 tsp (2 mL) salt
  • 1/4 tsp (1 mL) pepper
  • 3 tbsp (45 mL) Crisco® Vegetable Oil
  • 1 onion, peeled and thinly sliced
  • 1 cup (250 mL) thinly sliced mushrooms
  • 1/2 cup (125 mL) hickory-flavored barbecue sauce
  • 1 12-inch (30 cm) pre-baked pizza crust
  • 2 cups (500 mL) shredded mozzarella cheese

Instructions

  • Preheat oven to 450ºF (230ºC).
  • Line baking sheet with aluminum foil or parchment paper.
  • Heat oil in a large skillet on medium-high heat.
  • Add chicken.
  • Sauté for 3 minutes, or until interior is no longer pink.
  • Remove chicken from pan with slotted spoon.
  • Add onion and mushrooms to pan; season with salt and pepper.
  • Sauté for 3 minutes, or until onion is translucent.
  • Remove pan from heat.
  • Combine chicken and vegetable mixture.
  • Stir barbecue sauce into chicken and vegetable mixture.
  • Place pizza crust on prepared baking sheet.
  • Arrange half of the cheese on the pizza crust.
  • Top with chicken mixture.
  • Top chicken with remaining cheese.
  • Bake in preheated oven for 12 to 15 minutes, or until crust is crisp and cheese is melted.
  • Let stand for 3 minutes before cutting.
  • Serve immediately.
