Ingredients

  • 500 g (2 cups) roast turkey, cut in large dices
  • 2 tsp. (10 ml) vegetable oil
  • 1 average size onion, minced
  • 1 garlic clove, finely minced
  • 15 ml (1 tbsp.) fresh ginger, minced
  • 75 ml coconut milk
  • 250 ml (1 cup) chicken or turkey both
  • cup (125 ml) celery, finely diced
  • 50 ml ( cup) raisins
  • 1 green apple, peeled, seeded and diced
  • 15 ml (1 tbsp.) paste or powder curry
  • 15 ml (1 tbsp.) all purpose flour
  • Freshly ground pepper, to taste
  • 4 nan breads
  • Basmati rice

Instructions

  • Heat up oil in large saucepan over average heat and add onion, celery, garlic and ginger. Cook until onion is translucid.
  • Add diced apple, coconut milk and curry.
  • Simmer while stirring for five minutes or until apple is melted.
  • Add flour while stirring, then add chicken or turkey broth.
  • Cook until sauce starts to thicken.
  • Add diced turkey and raisins while stirring and add pepper to taste. Cook for three minutes.
