Ingredients

  • 6 ripe peaches, pitted and sliced (about 500 g or 1 lb.)
  • 15 mL (1 tbsp.) butter
  • 30 mL (2 tbsp.) honey
  • 2 mL (1/2 tsp.) ground nutmeg
  • 60 mL (1/4 cup) chopped almonds
  • 375 mL (1 1/2 cups) granola
  • 250 mL (1 cup) fat-free vanilla yogurt, as a topping

Instructions

  • Place a large cast-iron or other ovenproof skillet on the barbecue rack or on the stovetop, and heat at medium-high.
  • Melt butter and arrange peaches in a single layer in skillet.
  • Cook for 4 to 5 minutes, until they begin to soften and turn golden.
  • Turn peaches over and cook for 4 to 5 minutes longer, until tender. 
  • Turn off the heat; drizzle peaches with honey, and add nutmeg and almonds.
  • Stir to coat peaches well. 
  • Remove skillet from heat.
  • Scatter 250 mL (1 cup) granola on peaches.
  • Immediately divide among four plates and top each serving with a generous dollop of vanilla yogurt.
