Ingredients

  • 1/2 cup self-raising flour
  • 1 egg yolk
  • 1/2 cup milk
  • 1 1/2 tbs fresh dill
  • 80 g smoked salmon sliced
  • 1 tbs fresh dill *to serve
  • 2/3 cup mascarpone
  • 2 tsp wholegrain mustard

Instructions

  • Sift flour into bowl and gradually whisk in combined egg yolk, milk and dill.
  • Whisk until smooth. Drop teaspoons of mixture into greased pan and cook until bubbles appear.
  • Turn pikelets, brown on other side and cool on wire rack.
  • Spoon over topping, top with smoked salmon and extra dill.
  • Topping: Combine cheese and mustard. Mix well.
