Ingredients

  • 3 Tbsp. tomato paste
  • 2 tsp. sugar
  • 1 tsp. dried oregano leaves
  • 3 cups Heinz Tomato Juice , divided
  • 3 large green peppers
  • 2 cups instant white rice , uncooked
  • 2 green onions , thinly sliced
  • 1 cup frozen corn , thawed
  • 1-1/2 cups crumbled feta cheese with garlic and herbs , divided

6 servings, 1 stuffed pepper half (292 g) each

Instructions

  • Whisk tomato paste, sugar, oregano and 2 cups tomato juice in 13x9-inch pan sprayed with cooking spray until blended.
  • Cut peppers lengthwise in half, leaving stem ends intact; remove and discard membranes and seeds.
  • Place peppers, cut sides up, in prepared pan.
  • 2. Cook rice as directed on package, omitting salt and substituting remaining tomato juice for 1 cup of the water.
  • Stir onions, corn and 1 cup cheese into rice; spoon into pepper halves.
  • Cover.
  • Bake 20 min. or until peppers are crisp-tender and heated through.
  • Top with remaining cheese; bake, uncovered, 5 min. or until melted.
