Scrumptious strawberry pie with rosewater ice cream

Ingredients

  • 500 g. (1lb 2oz) strawberries, hulled and chopped
  • 1 tbsp. sugar, if needed (strawberries should be sweet enough)
  • Splash of cassis (optional)
  • 500 g. pack puff pastry
  • Flour, for dusting
  • 1 egg, lightly beaten, for egg wash
  • Icing sugar, for dusting
  • 500 g. strawberries (hulled, chopped and frozen in a plastic bag overnight)
  • 300 mL (10fl oz) cream
  • Splash of rosewater, optional
  • 4 individual ovenproof shallow dishes; large round cutter (or use a saucer)

Instructions

  • First make the ice cream: add the frozen strawberries to a food processor and blitz, then add the cream and rosewater, if using, and blitz again until the mixture thickens – the cream should begin to freeze. Serve immediately, or transfer to a container and put in the freezer until needed.
  • Preheat the oven to 200°C (180°C fan) mark 6. Add the strawberries, sugar, cassis, if using, and a little water to a pan and simmer until the berries have softened. Divide between the bowls, put aside and leave to cool.
  • Roll out the pastry on a lightly floured board and cut out 4 long thin strips. Using a brush or your finger, dip into a little water and run it around the rims of the bowls, then mould the pastry strips around the inside of the rims. Cut out 4 rounds for the tops, wet around the rim again, then press and secure the tops on to each pie. Make 2 slits in each, then brush with egg wash and put in the oven for 30-40mins or until the pastry is cooked and golden. Remove, dust with icing sugar and serve hot with a scoop of ice cream.
