Ingredients

  • 4 small  salmon fillets
  • 1 lb (454 g) asparagus, trimmed
  • 2 tsp (10 mL) olive oil
  • 1/4 tsp (1 mL) fresh ground black  pepper
  • 1 can (284 mL) CAMPBELL’S® Condensed Cream of Asparagus Soup
  • 1/2 cup (125 mL) milk
  • 1/2 cup (125 mL) finely chopped  green onion
  • 1 tsp (5 mL) finely grated lemon zest
  • 1 package gnocchi, prepared according to package directions

Instructions

  • Preheat broiler to high. Set oven rack to highest position.
  • Arrange salmon and asparagus on foil-lined baking sheet; brush with oil and season with pepper. Broil 5-8 minutes or until fish flakes easily when tested with a fork.
  • Meanwhile, in a saucepan, stir together soup, milk, green onions, and lemon zest until smooth. Bring to simmer over medium heat.Stir cooked gnocchi into sauce; simmer 2-3 minutes longer.
  • To serve, lay asparagus over gnocchi, top with salmon filet.
