Ingredients

  • spray oil for cooking
  • 900g lean lamb, cut into 1cm pieces
  • 1 medium (120g) onion, finely chopped
  • 2 cloves garlic, crushed
  • 2 tbsp rogan Josh curry paste
  • 1 can (400g) crushed tomatoes
  • 1/2 cup (125mL) low-fat yoghurt
  • 1/2 cup (20g) mint leaves, shredded

Instructions

  • Spray a saucepan with oil and heat over medium-high heat. Season lamb with salt and pepper. Add one-third of the lamb to saucepan. Cook for 2 to 3 minutes or until browned. Remove. Repeat with remaining lamb.
  • Add onion and garlic to saucepan. Cook for 4 minutes or until soft. Stir in curry paste. Cook for 1 minute. Add lamb and tomatoes. Cover. Reduce heat to low. Simmer for 15 minutes or until lamb is tender. Stir in yoghurt and mint. Remove from heat. Serve with rice and pappadums
