Roast Turkey Sauce with Apples and Honey

Ingredients

  • 750 ml roast turkey sauce (see recipe on Website)
  • 150 ml honey
  • 75 ml white wine or apple juice
  • 3 French shallots, finely minced
  • 5 Cortland apples, peeled, seeded and cut in large dices, in the juice of one lemon
  • 15 ml olive oil
  • 45 ml (3 tbsp.) butter
  • Thyme, to taste
  • Freshly ground salt and pepper, to taste

Instructions

  • Heat up a saucepan. Add one tbsp. butter and melt. Add shallots and small pinch of salt and mix. -Lower heat and let shallots sweat for two minutes without browning.
  • Add wine or apple juice and a bit of thyme and freshly ground pepper. Let reduce by half.
  • Add 100 ml honey and simmer for two minutes. Incorporate roast turkey sauce and simmer.
  • Heat up frying pan with olive oil on high heat, add one tbsp. butter and drained apples. Brown for two minutes and add remaining honey. Season to taste and let reduce for two minutes.
  • Add apples and one tbsp. butter to sauce. Set aside and keep warm.
