Ingredients

  • 210 g (7oz) Le Gris Bleu cheese, cubed
  • 125 mL (1/2 cup) thinly sliced white onion
  • 250 mL (1 cup) mint leaves
  • 250 mL (1 cup) sliced strawberries
  • 250 mL (1 cup) seedless mini cucumbers
  • 500 mL (2 cups) baby spinach arugula
  • 10 mL (2 tsp.) maple syrup
  • 3 strawberries
  • To taste, salt and pepper
  • 30 mL (2 tbsp.) red-wine vinegar
  • 45 mL (3 tbsp.) olive oil

Instructions

  • In a large bowl, gently toss baby spinach leaves, arugula, strawberries, cucumber, mint leaves, onion and cheese. Reserve.
  • In a small bowl, combine oil, vinegar, maple syrup and strawberries.
  • Reserve.
  • Divide salad among four plates and drizzle with strawberry vinaigrette.
  • Season with salt and pepper to taste. Enjoy!
